Grandma's Italian Specialities Made From Scratch!
We opened Anselmo's on May 6th,2011. It was a dream of mine to have a small mom and pop restaurant with my wife, Jennifer. The time finally came in our lives to share the wonderful, authentic, made-from-scratch Italian recipes from my loving grandma's kitchen with everyone.
Memories of her cooking are as vivid today as they were many years ago, especially when she was preparing and cooking her Meatballs. My family spent weeks with her during many summers in New Jersey. On Sundays, she would serve up her Spaghetti, Italian Sausage and Meatballs. I still remember the aroma lingering throughout the house all day. She knew we couldn't wait until dinner, so she would always make enough so we could have a Meatball hoagie for lunch. We had a typical Italian family dinner with huge bowls on the table. I can also remember Grandma making Lasagna, assembling every layer with pasta, made-from-scratch Meat Sauce, Ricotta and Mozzarella cheeses. I have never found Italian food anywhere that compares to Grandma's.
Grandma came to Louisville for our son's first birthday party in 1989. Jennifer had the opportunity to spend time in the kitchen helping her make hundreds of her Meatballs - which is what everyone wanted when they knew Grandma was in town.
Grandma was born in Palermo, Sicily, on April 7th, 1909, and came to the U.S. when she was just 9 years old. She was a stay-at-home mom, raised 6 children and lived in Pennsauken, NJ, until she passed at 90 years of age on January 5th, 2000. Everyone that knew her loved her. Her neighbors, friends and family all called her "Mom". She always had a smile on her face and a laugh that was contagious.
Jennifer follows Grandma's recipes and has created a number of her own made-from-scratch recipes too, such as the Vegetable Lasagna, Alfredo sauce and Chicken Parmesan just to mention a few. With the help of my kitchen staff, we created the Rattlesnake Pasta, Pasta Primvera, Hot Brown and other favorities. Our sons, Brandon and Matt, have also spent time in the kitchen putting together a few of their own creations, such as the Baked Spaghetti and Inferno Pizza.
